This award winning Portuguese cheese is made from pasteurized cow's milk in the island of São Miguel, Açores. This DOP (Denominação de Origem Protegida) cheese is aged for 9 months minimum before it can be sold. It has a hard consistency, with a slightly piquant flavor and a nice salty tinge.
Ingredients: Pasteurized cow's milk, lactic cultures, calcium chloride, rennet, and egg protein.
