PINTASSILGO

 

 

Pintassilgo produces olive oil from a traditional dry-land olive grove in organic production. The company started in 2017 to restore an old olive grove. Since then they haven't stopped. Each year a new cycle begins and with it comes a new oil, which is never the same as the previous one. They promote biodiversity, the greatest ally in producing ever better olive oil. They produce mostly Galician olive oil, a very rustic variety, quite tolerant to drought. 

 

 

In 2017 they began to restore an ancient olive grove in Alto Alentejo, more precisely in Santo Aleixo, in the municipality of Monforte. It is a dry olive grove, that is, it is only watered when it rains. The Galician olive tree variety is very resistant to drought and adapted to the climate of this region. Because they respect nature and believe that they must contribute to biodiversity, they have begun the period of conversion to a certified organic production method, promoting soil improvement and conservation and using practices that promote the health of trees, in order to obtain the best olive oil.
