Portuguese desserts are rich and varies. They evolved gradually over the centuries, often in convents and behind closed doors. The desserts and sweets vary considerably from north to south but eggs and sugar syrups are the common elements of unity in our confectionery. Many sweets are made for particular religious or pagan feast days and some sweets are, as a rule, only made on specific dates. Although these recipes stipulate a lot of sugar, you can reduce the amount although you run the risk of losing some of the texture and characteristics that it provides.
