The history of Casa de Santo Amaro dates back to the creation of the Morgadio de Santo Amaro on October 14, 1687, and today, it remains under the stewardship of the family's eighth generation. Casa de Santo Amaro's olive oils are best described as true "Estate Olive Oils." Every stage of the process—olive cultivation, oil extraction, packaging, and the final product's commercialization—is conducted on the estate, embodying the "Farm-to-Table" philosophy.

Throughout the year, the estate's olive trees are carefully nurtured. By late October, the olives are hand-harvested and pressed in their own mill. The oil is then stored and packaged on-site, ensuring it is delivered directly from their grove to the consumer's table with the highest quality standards. Casa de Santo Amaro believes there is no other way to produce premium Extra Virgin Olive Oil—"pure juice from fresh, healthy olives."
