Mestiço de Tolosa Cheese



Known as Mestiço because of its use of both sheep and goat’s milk, this cheese dates back to the early 20th century. The flavor is slightly intense with clean, pleasantly tart flavor. As it ages, it is rubbed with paprika, giving the cheese its characteristic orange color. Its production is protected by an IGP, which ensures the cheese is made within a defined geographical area with raw milk from indigenous breeds of sheep and goats raised in the region and fed a diet of natural pasture. A family-owned company headed by cheesemaker Maria makes the cheese in the region of Alto Alentejo.
