David Leite is the founder of the website Leite's Culinaria (, which was the first online publication to win a James Beard Award (2005 and 2006). He’s the author of Notes on a Banana: A Memoir of Food, Love, and Manic Depression as well as The New Portuguese Table: Exciting Flavors from Europe's Western Coast, winner of the 2010 IACP First Book/Julia Child Award. He has appeared on many TV programs, including The Today Show. His writing has been seen in publications such as Martha Stewart Living, Saveur, Bon Appetit, Gourmet, Food & Wine, and more. He’s a citizen of both the US and Portugal.



Ana Carrilho’s passion for olive oil began when she enrolled in the Oil and Fat Technology course at the Instituto Superior de Agronomia de Lisbon (ISA). She later moved to Florence where she worked in the research and development of the world’s largest olive oil company. Ana eventually returned to Lisbon as guest teacher at ISA, then spent two years studying in Spain, helping build three olive mills, judging olive oil in numerous national and international competitions, and being an advocate for protecting native varietals of olives and producing great oil from them. In 2013, Ana began working at Esporão and has overseen the creation of a new sustainable olive mill and the company’s first organic olive oil.
